Healthy Energy Bars

  • 4 big medjoul dates
  • 65 gr walnuts
  • 65 gr almonds
  • 65 gr ground almond
  • 25 gr coconut oil
  • 1 egg
  • 40 gr peanut butter
  • 20 gr grated coconut
Instructies
  1. Preheat the oven on 160 degrees.
  2. Soak the medjoul dates for about 15 minutes in hot water.
  3. Cut the walnuts and almonds in big pieces and heat them in a pan for a few minutes until they are golden brown. Be careful not to burn them.
  4. Add the ground almonds, coconut oil (make sure it’s liquid. Otherwise melt it in the microwave for 30 seconds), egg, peanut butter and grated coconut in a bowl and mix well.
  5. Add the dates into a food processor or blender and mix until it becomes a paste. Add a tiny bit of water if necessary. If you don’t have a food processor, try to cut them into very small pieces, hope this will work as well.
  6. Now it’s time to add the date paste, walnuts and almonds into the bowl and mix it well.
  7. Spread the mixture on baking paper on a baking tray. Make sure it’s about 1,5 cm thick and that all parts stick together.
  8. Place it into the oven for about 25 minutes.
  9. When it’s ready let it cool down before cutting your healthy energy bar into pieces. I could make 12 energy bars with this recipe.
